Golf in Philippines

Golf is a relatively easy sport that requires concentration and precision.  The object of golf is to hit the ball with a club and get the ball into the hole, in the least number of strokes.  Many people consider golf an easy game to learn, but not everyone is actually good at golf. Golf is played on a golf course, and the green area is known as the fairway. The typical course consists of 18 holes, although golfers can play a 9-hole course through twice to play a full game of 18 holes.

The modern game golf originated in 15th Century Scotland but the game’s ancient origins are unclear and much debated.  Some historians trace the sport back to the Roman game of paganica, in which participants used a bent stick to hit a stuffed leather ball. One theory asserts that paganica spread throughout Europe as the Romans conquered most of the continent, during the first century BC, and eventually evolved into the modern game.  In Philippines, Golf is thought to have been introduced to Manila in 1886 by British people working for the Manila Railway Company. The Brits built a 3-hole course in paddy fields south of Intramuros, and by 1901 there was a 9-hole golf course next to the railway station. This was the beginning of the Manila Golf Club.  Then the Philippine Open was launched.  The Philippine Open was held in Caloocan from 1913 (natives were barred from taking part till 1928) to 1934 and the first winners were all amateur players.  The locals got a big break in 1929 when a kind-hearted American, whose identity, was unfortunately never recorded in local golf history, elected to sponsor Montes for the Philippine Open that year. Thus, Filipino Larry Montes, who honed his skills while caddying at Muni Links, became the first professional champion and his win triggered an event that was to become a milestone and changed the face of Philippine Golf.

Today, Philippines is one of the most popular golf destinations in the world because the 7,107 islands boasts of several world class golf courses where some of the international tournaments are held.  Anyone can tee off and enjoy golf hot-spots in the country with beautiful scenery, lush greens, and seaside resort venues.

Itlog na Maalat or Salted Eggs

Itlog na Maalat or Salted Eggs

In Philippines, salted egg is a preserved food product made by soaking duck or chicken eggs in brine, or packing each egg in damp, salted charcoal. From the salt curing process, the salted duck eggs have a briny aroma, a very liquid egg white and a firm-textured, round yolk that is bright orange-red in colour.

Salted eggs are normally boiled before being peeled and eaten. They can be used as a condiment, as a garnish to other dishes,  and for fillings.  They are best enjoyed during breakfast along with fresh slices of onions, tomatoes, and steamed white rice.  The egg white has a sharp, salty taste while the orange red yolk is rich, fatty, and less salty which Filipinos enjoy very much.

Ingredients:

6-duck eggs (chicken eggs optional)

1-cup sea salt

4-cups water

How to Prepare:

  1. Wash duck eggs with lukewarm water to remove any dirt.
  2. Pour 4-cups of water and 1-cup of sea salt into a small sauce pan. Heat salt and water mixture until the sea salt dissolves completely.  It is now called a brine.
  3. Set the brine aside until it has cooled down.
  4. Place eggs in container then pour the brine until it completely covers the eggs and seal air-tight.
  5. Keep container in a dark place like the corner of your cupboard and let it sit between 21 to 30 days.
  6. After the “incubation” period, remove the eggs from the brine and give them a quick wash under cold water.
  7. Then boil the eggs just like regular hard boiled eggs.
  8. Once the eggs are hard boiled, let them cool for a while before placing inside the refrigerator. Traditionally, Philippine commercial salted eggs are dyed red to distinguish the salted eggs from the regular eggs.
  9. Consume the salted eggs within 15 days of refrigeration.

Cock Fighting (Sabong)

2 roosters - Gamecocks - ready to fight

2 roosters – Gamecocks – ready to fight

Cock fighting is said to be the world’s oldest spectator sport. It goes back 6,000 years in Persia.  A cock-fight is a blood sport between two roosters (cocks), or more accurately gamecocks, held in a ring called a cockpit. The combatants, referred to as gamecocks, are specially bred birds, conditioned for increased stamina and strength.  Cocks are given the best of care until near the age of two years old. They are conditioned, much like professional athletes prior to events or shows.

Cockfighting or Sabong as it is known in the Philippines is a multi-billion dollar industry. It is a popular way of gambling, but it is also seen as a national sport. There are illegal and legal cockfights. Legal cockfights are held in cockpits while Illegal cockfights, called tupada or tigbakay, are held in secluded cockpits where the authorities would not be able to operate raids. There are two kinds of knives used in Philippine cockfighting. The single edge blade (use in derbies) and double edged blades, lengths of knives also vary.  All knives are attached on the left leg of the cock. But depending on the agreement between owners, blades can be attached on the right leg, or even on both legs. Sabong and illegal tupada, are judged by a referee called sentensyador, whose verdict is final and not subject to any appeal. Bets are usually taken by the kristo, known as such for his outstretched hands when calling out wagers from the audience and skillfully doing so purely from memory.

Sabong is so popular in the country that many households in rural areas raise and own fighter cocks, invest a huge amount in feeds and supplements for their fighting cocks, each one vying to win the derby. Huge amount of money is involved during derbies as spectators also bet with each other while watching the fight, thus, it is a combination of sport and also a kind of gambling. The Philippines has hosted several World Slasher Cup derbies, held twice a year and staged in Araneta Coliseum. The world’s leading game fowl breeders gather twice a year during this event.

Why Manny “Pacman” Paquiao Lost?

The legendary Philippine boxer Manny Pacquiao lost in the 6th round against his Mexican opponent Juan Manuel Marquez during their 4th boxing match held at the MGM Grand Garden Arena last December 8, 2012. It was a nightmare for Pacquiao but a triumphant battle for Marquez who fought and lost to him 3 times in the past. Pacquaio was knocked-out by a perfect punch from Marquez which brought him down on the floor, face down. Pacquiao had not been knocked out in over 13 years. But why did he lost the game this time? Some people say it’s because he changed his religion and changed his belief. Maybe lack of preparation, he is getting older, or he was too confident with himself before the fight? On the otherhand, is it because Marquez became more stronger, more wiser, or more determined to win the match against his greatest rival? Some reports claim that Marquez studied the tactics played by Pacman and he was well prepared mentally and physically. Only Pacquiao knows the answer.

Disaster in Mindanao caused by Typhoon Bopha

More than a thousand people have been killed in the destruction left by Typhoon Bopha in Mindanao, the southern island of the Philippines. Thousands are still living in evacuation centers — their homes totally destroyed. Typhoon Bopha or Pablo was the strongest tropical cyclone to ever hit the southern Philippine island of Mindanao, making landfall as a Category 5 super typhoon with winds of 160 mph. Bopha made landfall late on December 3, 2012. Bopha cut a swath of destruction, flooding farming and mining towns and burying many people in mudslides and left many people homeless, and thousands lost their livelihood. Every year, Philippines is hit by around 20 typhoons and Bopha is the strongest. Almost exactly a year ago, typhoon Washi killed 1,500 people in Mindanao. It said that more than 400,000 families were affected by the killer typhoon.
Donations are flowing in from different sources and it will them take time to recover from this catastrophe, a very sad Christmas for the victims.
